Baked Potato Chips with Avocado Mayo and Gremolata

Description

The potatoes crisp up so well in the oven and are an absolute treat with the egg-free avocado mayo and zesty gremolata. Great as a vegan snack.


Ingredients

Chips

3 (660 g) medium potatoes
¼ C (60 ml) Westfalia Butter Flavoured Avocado Oil
Salt and pepper

Avocado Mayonnaise

1½ (375 g) medium avocadoes
3 Tbsp (45 ml) Westfalia Butter Flavoured Avocado Oil
4 tsp (20 ml) lemon juice
4 tsp (20 ml) water
4 tsp (20 ml) chives, finely chopped
1 tsp (5 ml) Dijon mustard
2 garlic cloves, finely chopped
Salt and pepper

Gremolata

½ C (125 ml/50g) Italian parsley, finely chopped
3 Tbsp (45 ml) Westfalia Butter Flavoured Avocado Oil
2 Tbsp (30 ml) lemon zest
2 Tbsp (30 ml) lemon juice
3 garlic cloves, finely chopped
Salt and pepper


Instructions

Chips

Pre-heat the oven to 180 °C.

Line 2 large baking trays with non-stick Silpat baking mats or baking paper.

Using a mandolin or very sharp knife, cut the unpeeled potatoes into slices about 2-3mm thick. Brush each slice with the Westfalia Butter Flavoured Avocado Oil on both sides and arrange in a single layer on the baking trays. Season with a sprinkling of salt and pepper. Bake for 20 minutes. Flip each chip over and bake for another 20 minutes. Flip each chip over for a second time and bake for another 10 minutes.

Keep an eye on the chips throughout the cooking process as some tend to colour and brown more quickly than others. Remove some of the chips as they are cooked, if necessary. Allow the chips to cool on the trays. The chips can be served slightly warm or at room temperature.

Avocado Mayonnaise

Place all of the ingredients into a food processor and purée until smooth. Season to taste.

Gremolata

Whisk all of the ingredients for the gremolata together and season to taste.

To Serve

Serve the chips with the avocado mayonnaise and gremolata on the side for dipping.


Notes

The chips do not store as well; deep-fried chips and are best eaten on the same day.
