Easy Mealie Bread with Avocado Oil

Description

Mealie bread is a true South African favourite and a popular side dish with a weekend braai.


Ingredients

1 C (250 ml) coarse mealie meal
1⅓ C (330 ml) cake flour
2 tsp (10 ml) baking powder
½ tsp (2,5 ml) paprika or to taste
½ tsp (2,5 ml) salt
1⅓ C (330 ml)) buttermilk or plain yoghurt
2 large eggs, beaten
C (80 ml) Westfalia Plain Avocado Oil
1 x 410 g tin cream style sweetcorn
2 Tbsp (30 ml) seeds of your choice, like sunflower, black or white sesame or poppy seeds


Instructions

Preheat oven to 180 °C. Line the base of a 1,5-litre bread tin with baking paper. Lightly grease with a few drops of avocado oil.

Place all the ingredients, except the seeds, in a large mixing bowl. Stir well until no dry flour is visible.

Spoon batter into bread tin and spread evenly on top. Sprinkle with seeds and bake for 45-60 minutes or until a cake tester comes out clean.

Allow to cool in the tin for a few minutes. Turn out onto a cooling rack and allow to cool down a bit more, so that it’s easier to slice.

Serve warm with butter or grated cheese and caramelised onions as a delicious side dish with a braai.
