Linguini with Garlic & Mushrooms

Description

A light, simple linguini, perfect for an easy vegetarian dish!


Ingredients

500 g linguini pasta
500 g Portabellini mushrooms, sliced
2 large leeks, finely chopped
4 cloves garlic, thinly sliced
1 C (250 ml) reduced-fat cream (optional)
juice of 1/2 lemon
sea salt and freshly milled black pepper to taste
fresh oregano for garnishing (optional)


Instructions

Bring a large pot of water to the boil and add the linguini. Cook according to the instructions on the packet or until al dente.

Meanwhile, in a large saucepan, fry the mushrooms and leeks for 5–7 minutes or until all the liquid from the mushrooms has evaporated and the mushrooms have started to brown. Add the garlic and fry for another minute. Add the cream, if using, and lemon juice and season to taste. Drain the linguini and toss in the sauce. Garnish with milled black pepper and a few oregano leaves.
