Description

Indulge in the delightful fusion of flavours with these braaied jaffles, generously filled with aromatic bobotie-spiced beef mince and gooey mozzarella cheese.


Ingredients

Bobotie Mince

500 g beef mince
2 Tbsp (30 ml) olive oil
1 onion, finely chopped
3 garlic cloves, finely grated
1 thumb-sized piece of ginger, finely grated
1 Tbsp (15 ml) curry powder
1 tsp (5 ml) turmeric powder
1 tsp (5 ml) ground cinnamon
1 tsp (5 ml) ground cumin
1 tsp (5 ml) ground coriander
½ tsp (2.5 ml) ground clove
1 tsp (5 ml) salt
1 tsp (5 ml) pepper
1 tsp (5 ml) sugar
1 Tbsp (15 ml) apple cider vinegar
2 Tbsp (30 ml) chutney
¼ C (60 ml) raisins

To Assemble

24 slices of bread of choice
Ladismith Spreado
300 g Ladismith Mozzarella, grated

To Serve

¼ C (60 ml) chutney
small handful of fresh coriander, washed


Instructions

Bobotie Mince

Heat a deep-sided frying pan over high heat. Add the beef mince and brown well, then remove from the pan and set aside. Reduce heat to medium-high. In the same pan, heat the oil, then add the onion and fry for about 5 minutes until soft and translucent. Add the garlic and ginger, frying until fragrant, about 1 minute.

Stir in the curry powder, turmeric, cinnamon, cumin, coriander, clove, salt, and pepper and fry for another minute. Return the browned mince to the pan, stirring to combine with the spices.

Add the sugar, apple cider vinegar, chutney, and raisins and stir well. Cook for about 5 minutes to meld the flavours, then remove from heat and cover.

To Assemble

Prepare a braai with moderate heat coals.

Spread Ladismith Spreado onto both sides of each slice of bread.

Assemble the sandwiches by starting with a layer of grated mozzarella on the base slices of bread. Add two generous tablespoons of bobotie mince to the centre, and then another layer of mozzarella on top. Close the sandwiches. Place a sandwich onto one side of the jaffle iron and press to seal and close it. Trim any excess bread.

Place the jaffle iron on the braai and turn it every minute, checking periodically for an evenly toasted golden colour.

Repeat the process until all of the jaffles are done. Tip: to keep the cooked jaffles warm, place them in an oven or air fryer set to 100ºC.

To Serve

Serve these mouthwatering jaffles with a dollop of chutney and fresh coriander.
