Sticky Moroccan Ribs

Description

These will leave you with sticky fingers and pure happiness!


Ingredients

1 kg pork ribs

Basting sauce

1 cup (250 ml) tomato sauce
½ cup (125 ml) Worcestershire sauce
juice and zest of 2 oranges
½ cup (125 ml) honey
1 Tbsp (15 ml) cumin seeds
freshly milled black pepper


Instructions

Place the ribs in a large pot of boiling salted water, cover and allow to simmer gently for 1½ hours or until tender. Meanwhile, you can make the sauce and a salad to go with the ribs.

Preheat the oven to 220 °C.

Basting sauce

Combine all the basting sauce ingredients.

Place the boiled ribs onto a baking tray and brush liberally with the sauce until well coated. Keep the remaining sauce to one side. Place in the oven and roast for about 20 minutes, basting regularly with the remaining sauce. (If the ribs are cold from refrigeration, roast for about 30 minutes.)

Serve with a crunchy coleslaw salad.


Notes

You can also prepare these ribs over the coals.

Make sure you have serviettes nearby!
