Description
Tomato is notorious for making sandwiches soggy; we solve that problem by making a delish tomato and onion relish instead. Add in mature cheddar and fresh rocket and you have the perfect road trip sarmie.
Ingredients
Tomato and Red Onion Relish
2 Tbsp (30 ml) extra virgin olive oil
600 g Rosa or Roma tomatoes, halved
2 large red onions, sliced
150 g brown sugar
⅓ C (80 ml) red wine vinegar
1 tsp (5 ml) dried thyme
1 tsp (5 ml) paprika
1 tsp (5 ml) chilli flakes
½ tsp (2,5 ml) garlic powder
To Assemble
butter
8 slices of good quality sourdough bread
40 g wild rocket
300 g mature cheddar, sliced
sliced sweet and sour pickles
tomato & onion relish (as above)
Instructions
Tomato and Red Onion Relish
Add the olive oil to a large pot over medium-high heat. Add all of the ingredients to the pot and mix well to combine. Bring to a simmer then turn the heat down to low and cook slowly while stirring occasionally. Use the back of a spoon or a potato masher to lightly crush the tomatoes as they cook down. When the mixture is thick and jammy it is done. Take it off the heat and allow to cool. Store in a sterilized jar in the fridge.
To Assemble
To assemble your road trip sarmies, generously butter the bread and then add a layer of rocket to the base. Top with cheese and then pickles. Finish with dollops of tomato and red onion relish and then top with the other slice of sourdough.
