Vegan Cannellini Bean Shakshuka

An original shakshuka would include eggs baked into the sauce of course, but we think this vegan recipe, with the inclusion of beans to bump up the protein, is just as good, if not better! We’ve cooked the tomato base of the shakshuka with Westfalia Garlic Flavoured Avocado Oil which imparts that delicious garlicky flavour. Add in Westfalia Spicy Guacamole for creaminess and a boost of healthy fats (also how about that colour!).

We love that this is an all-in-one-pan kind of meal that goes far and is filling – it’s the ideal weekend brekkie or brunch for a crowd. It even works as a tasty light supper.

Miso-Glazed Aubergines with Vegan Miso Mayo

Miso is a cook’s best friend. Packed with flavour potential and good with just about everything! Its salty umaminess takes an average dish to amazing and we love how much depth of flavour it adds. This dish of miso-glazed aubergine is a total winner, super easy to make and really delivers on yum factor. Add dollops of Westfalia Plain Guacamole to this dish to include healthy fats, potassium and fibre.

This vegan recipe is the perfect side dish for any meal, including non-vegan ones.

Vegan Roast Veggie Bowl with Quinoa

We love all the roasty, toasty flavours and textures in this healthy bowl. It will take a bit of oven juggling to get everything roasted but the resulting caramelised flavours are so worth it. We’ve roasted the chickpeas and vegetables with a generous drizzle of Westfalia Lemon Flavoured Avocado Oil, which imparts a subtle fresh flavour. A dollop of Westfalia Sweet Chilli Guacamole adds creaminess and a subtle spicy bite. This, combined with a drizzle of avocado oil, dresses the bowl perfectly.

Vegan Flapjacks with Whipped Coconut Cream and Berry Coulis

Who wouldn’t want to wake up to a stack of fluffy flapjacks on a lazy weekend morning? These ones are the lightest and fluffiest ones you’ll find, we guarantee. We love them drenched in maple syrup, with a cloud of coconut cream and the sweetness of berry coulis. We’ve fried them in Westfalia Plain Avocado Oil but to add a lemony edge, you can also opt to fry with Westfalia Lemon Flavoured Avocado Oil.

This vegan recipe is a winner, if these flapjacks don’t get you out of bed, nothing will!
