Melanzane Sandwich

Description

A sandwich winner! The roasted aubergine is rich and indulgent, almost meaty, and it lends luscious creaminess to the bread.


Ingredients

a good seedy artisanal roll
1 Tbsp sundried tomato pesto
3 slices of grilled or blast roasted aubergine
2 ½ slices of Danish feta
2 slices of fresh tomato
a drizzle of your favourite dressing

a few red onion rings
a few rocket leaves or rocket salad mix


Instructions

Split the roll in half lengthways but not all the way through. This allows you to build your sandwich.

Spread the bottom half of the roll to the very edge with the sundried tomato pesto. Arrange the roasted aubergine slices on the bottom half of the roll. Place the feta slices on top of the aubergine slices. Place the slices of tomato on top of the feta.

Drizzle with your favourite dressing.
