Lemony Courgette and Chilli Spaghetti

Description
A beautiful dish with charred courgette and a hint of chilli. Satisfying yet so simple and bursting with lemony flavour. All done in around 20 minutes.
Ingredients
6 courgettes, thinly sliced into ribbons using a vegetable peeler
4 T (60 ml) olive oil
1 onion, finely chopped
2 cloves garlic, crushed
1–2 chilies, deseeded and finely chopped
Juice of 1 lemon
400 g spaghetti, cooked according to the instructions on the packet
Instructions
Heat a grill pan until hot and grill the courgette ribbons quickly for a minute on each side.
Remove from the pan, drizzle with a little olive oil and season with salt and pepper. Set aside.
Heat 2 Tbsp olive oil in a frying pan and gently fry the onion, garlic and chilli for a couple of minutes or until onions are translucent. Be careful not to burn the garlic. Remove from heat and add the juice of 1 lemon.
Toss the cooked spaghetti into the warm lemony olive oil and season well with salt and freshly ground pepper.
Toss in the grilled courgettes and serve immediately with extra olive oil and lemon.
Notes
Cold pasta is always a quick and easy leftover lunch option. Just add another glug of olive oil, an extra squeeze of lemon juice and some fresh rocket leaves, and you have a winner.
