Honeycomb Dipped in Dark Chocolate

Description
Make your very own honeycomb at home. Crunchy, golden and when dipped in chocolate, a decadent treat.
Ingredients
3/4 C (180 ml) or (150 g) sugar
4 Tbsp (60 ml) honey
2½ tsp (12.5 ml) bicarbonate of soda
100 g dark chocolate (70% cocoa), melted
Instructions
Prepare and line a baking tray or a small, deep baking dish with some baking paper (the depth of the dish will determine the thickness of the honeycomb shards, so use a dish based on your preference).
Place the sugar and the honey into a saucepan and melt gently over a very low heat until the sugar has dissolved completely. Do not stir too much or it may crystallise.
Once the sugar has dissolved, bring to the boil and cook for 10 minutes or until the mixture reaches 154 °C (hard crack stage). Remove the saucepan from the heat and sift the bicarbonate of soda into the syrup, stirring only until the mixture froths and expands to double its size. Quickly pour the mixture into the prepared baking tray and keep to one side for 15 minutes or until the mixture has set completely.
Break the honeycomb into shards and dip into the melted dark chocolate. Allow the chocolate to set before serving.
