Gibson Cocktail Oysters with Lime

Description

Oysters get a classic makeover with a Gibson cocktail garnishing, complete with pickled onion and lime zest.


Ingredients

12 fresh oysters, shucked
4 blocks ice
2 Tbsp (30 ml) Inverroche Classic Gin
1 Tbsp (15 ml) dry vermouth
12 white cocktail onions
zest of 1 lime
sea salt and freshly ground pepper


Instructions

Using a shucking knife, carefully shuck the oysters.

Add 4 ice blocks to a mixing jug, then add the gin and the vermouth. Stir well for a minute until well combined and the ice has diluted the mixture slightly.

Strain off the cocktail mixture and add ½ to 1 tsp to each oyster depending on how strong you want them to be. Garnish with a cocktail onion, top with lime zest and season. Serve immediately with an Inverroche Gibson cocktail on the side.
