Our Favourite Frozen Dessert and Ice Cream Recipes
The legend goes that Italian Duchess Catherine de Medici, upon marrying Henry II of France, took Italian chefs with her to France who reportedly had recipes for sorbets or flavoured ices.
Fast forward another 100 years where Charles I of England became so enamoured with the frozen dessert, that he offered the royal ice cream maker a lifetime pension to keep the recipes a secret, reserving the privilege for the royal family.
While ice cream may not be so exclusive these days, it is no less popular. We round up a collection of our favourite frozen dessert and ice cream recipes to inspire you to make something delicious.
Frozen Dessert – Ice Cream and Gelato
Technically ice cream is defined as a sweetened, frozen food made from dairy products, sugar, flavourings and a base stabiliser, which is usually eggs. Gelato falls under this category too – it’s the Italian name for ice cream, with one specific requirement being that gelato has to have at least 3.5% butterfat, making it lower in fat but higher in sugar than traditional ice cream (which roughly has 10% butterfat). It is churned, usually in an ice cream maker to break down ice crystals.

Frozen Dessert – Ice Lollies
Ice lollies are generally made from a flavoured liquid that is frozen. They are made mostly from fruit juice, although there are trends popping up where ice lollies are being made with alcohol or cocktails. They are set in a mould, with a wooden stick used for a handle. Ice lollies are being used more and more as dessert recipes and not just mobile lolly to eat while on the go.

Frozen Desserts – Sorbet
Sorbet is defined as frozen sweetened water and flavoured with fruit juice, puree or even liqueur. Similarly to ice cream, sorbets are also churned to create a smooth texture, with little to none ice crystals.

Frozen Dessert – Parfait

Frozen Apricot Parfait
This is a simple, wonderfully light and fruity frozen dessert that will have your guests wondering what Cordon Bleu school you attended.
Frozen Dessert – Vegan Ice Cream
The number one challenge with creating vegan ice cream is mimicking the creamy custard base you get from dairy. Sure, you could always freeze bananas and blitz them within an inch of their life… but that’s a problem if you don’t eat bananas, plus the banana method doesn’t quite get around the icy texture. This recipe puts all those worries to rest, not only is it vegan, but it’s super easy, reasonably cost-effective and requires no ice cream machine.
Frozen Dessert – Granita
A semi-frozen dessert made from sugar, water and flavours, similar to a sorbet. Scrape a granita as it freezes to produce separate crystals compared to churning the sorbet to ensure a smooth texture.
Pineapple & Lemon Granita Recipe
This is an incredibly fresh and tangy bite that is perfect to serve as a palate cleanser in-between courses, or as a light refreshing dessert on a hot summers day.
