Legend goes that upon marrying Henry II of France, Italian Duchess, Catherine de Medici, took Italian chefs with her to France who reportedly had recipes for sorbets or flavoured ices – frozen desserts if you will. Fast forward another 100 years, Charles I of England, became so enamoured with the frozen dessert, that he offered the royal ice cream maker a lifetime pension to keep the recipes a secret, reserving privilege for the royal family. While ice cream may not be so exclusive these days, it is no less popular. We round up our favourite frozen dessert and ice cream recipes to inspire you this summer.

Frozen Dessert – Ice Cream and Gelato

Technically, ice cream is defined as a sweetened, frozen food made from dairy products, sugar, flavourings and a base stabiliser (usually eggs). Gelato falls under this category too – it’s the Italian name for ‘ice cream’, with one specific requirement being that gelato has to have at least 3.5% butterfat, making it lower in fat but higher in sugar than traditional ice cream which roughly has 10% butterfat. It is churned, usually in an ice cream maker to break down ice crystals for that deliciously smooth consistency we can’t get enough of.

Frozen Dessert – Vegan Ice Cream

The number one challenge with creating vegan ice cream is mimicking the creamy custard base you get from dairy. Sure, you could always freeze bananas and blitz them within an inch of their life… but that’s a problem if you don’t eat bananas, plus the banana method doesn’t quite get around the icy texture. This recipe puts all those worries to rest, not only is it vegan, but it’s super easy, reasonably cost-effective and requires no ice cream machine.

I made the blueberry and cheesecake popsicle and pina colada popsicles for dessert on Sunday which went down very well but I need to know about the chocolate oating on the pina colada. … the recipe says the chocolate will set immediately but all that happened was the chocolate fell straight off! I eventually made a plan to get it to stick but it didn’t look all smooth and beautiful as in your picture.

  2. Hi Di, that’s a good question. We would suggest maybe adding a tablespoon or so of coconut oil to the chocolate when melted – the coconut oil freezes well and helps the chocolate set. It’s like a homemade version of ‘Ice Cap’ and causes the chocolate to freeze more easily. Hope this helps.
