Berry Swirl
400 g mixed frozen berries
3 Tbsp (45 ml) sugar

Vanilla Ice Cream Base
2½ C (625 ml) fresh cream
1 vanilla pod, split in half
1 x 385 g can condensed milk
3 egg whites

Berry Swirl
Place the frozen berries and sugar in a saucepan over medium heat and cook until the sugar dissolves. Simmer for 15 minutes or until the berries have softened and the juice has reduced to a thin, syrupy consistency. Remove from the heat and cool completely.

Vanilla Ice Cream Base
Pour the fresh cream into a glass bowl and add the seeds of the vanilla pod. Whisk the cream with an electric beater until soft peaks form. Slowly pour in the condensed milk and continue to whisk until you reach stiff peak stage. Keep to one side.

Whisk the egg whites in another glass bowl until stiff and fold this into the cream mixture. Gently fold in the cooled berries, leaving a rough vanilla swirl.

Pour the mixture into an ice-cream container, cover with a lid and freeze for at least 12 hours before serving.
