Mango Popsicles with Vanilla Frozen Yoghurt

Vanilla Frozen Yoghurt
seeds of 1 vanilla pod
1½ C (375 ml) Bulgarian yoghurt
1 Tbsp (15 ml) icing sugar
1 mango, pulped
1 tsp (5 ml) icing sugar (optional)
Add the vanilla seeds to the yoghurt. Add the icing sugar and stir. Keep to one side.
Pulp the mango in a food processor and add the sugar. Layer the mango and vanilla yoghurt in the popsicle moulds. Carefully insert the straws into the moulds and place the moulds into the freezer to set overnight.
Unmould and serve immediately.
