4 Ingredient Avocado & Lime No Churn Ice Cream

Ice Cream

1 x 385 g tin of condensed milk
2 medium avocados, pitted and flesh scooped out
Zest of 3 limes
2 C (500 ml) fresh cream

You’ll Need 

Baking paper
A loaf tin

Optional Extras To Serve

Wafer ice cream cones
1 x 80 g slab of white chocolate, melted
50 g crushed pistachio nuts

Ice Cream

Use a stick blender to blitz the condensed milk, avocado and lime zest together until smooth.

Whip the cream to stiff peaks. Fold 1 cup of whipped cream into the condensed milk mixture. Add the rest of the cream and fold in lightly to combine. Pour the mixture into a baking paper-lined loaf tin and smooth out the top with the back of a spoon.

Add a little more lime zest to the top, then cover with a sheet of baking paper and lightly press it into the mixture so that there is no air between the mixture and the paper. Place into the freezer overnight to set.

To Serve

Dip the rims of the wafer cones in melted white chocolate and then sprinkle with chopped pistachio nuts. Allow to dry.

Remove the ice cream from the freezer and allow to stand at room temperature for 8-10 minutes to soften slightly. Scoop and serve on your dipped cones with a sprinkle of pistachio nuts on top.

Alternatively, keep it simple and scoop your ice cream into a bowl and enjoy as is!
