Egg Mayo, Crispy Bacon and Watercress Baps

Description

The perfect kind of brunch recipe!


Ingredients

6 large free range eggs, hard boiled, peeled and chilled
2 spring onions, finely chopped
3 T (45 ml) mayonnaise
2 T (10 ml) Dijon mustard
Salt and pepper to taste
250 g streaky bacon
50 g watercress
4 soft burger buns/baps


Instructions

Preheat the oven grill.

Finely chop the chilled eggs and combine with the spring onion, mayo and mustard. Season to taste.

Place the bacon on a baking sheet and place on the highest shelf in the oven.

Grill the bacon until crispy on both sides, turning once.

Fill each bun with egg mayo, bacon and watercress.
