Caramelised Onion & Gammon Quiche

Description
A rich and savoury quiche filled with caramelised onions, cheddar, and smoky gammon. Great for repurposing leftover gammon.
Ingredients
Pastry
1 roll shortcrust pastry, defrosted if frozen
Filling
1 Tbsp (15 ml) olive oil
2 onions, thinly sliced
4 large eggs
1 C (250 ml) cream
½ C (125 ml) milk
1½ C (150 g) grated cheddar
1½ C (200 g) cooked gammon, diced
2 stalks of fresh thyme, leaves picked
Salt and freshly ground black pepper, to taste
A few sprigs fresh thyme
Instructions
Preheat the oven to 180 °C.
Line a 23 cm tart tin with the pastry, pressing gently into the corners. Prick the base with a fork, then chill for 15 minutes. Blind bake (using baking paper and baking beans if you have) for 10–15 minutes until lightly golden. Remove the baking paper and baking beans, and allow to cool slightly.
Heat the olive oil in a frying pan over medium heat. Add the onions and cook slowly for 10–15 minutes until soft and caramelised.
Whisk together the eggs, cream, and milk. Season well with salt and pepper. Scatter the caramelised onions, cheese, gammon, and thyme over the pastry base, then pour over the egg mixture.
Bake for 30–35 minutes until set and golden. Allow to cool slightly before slicing.
Serve warm or cold with mixed greens and a scattering of fresh thyme.
