Sophia’s Malay Chicken Curry

Description

Simple ingredients make for a simply delicious chicken curry.


Ingredients

¼ C (60 ml) olive oil
2 medium onions, sliced
2 cloves garlic, crushed
2 Tbsp (30 ml) medium-strength curry powder
Thumb-sized piece fresh ginger, grated
3 quills of cinnamon
2 bay leaves
2 medium tomatoes, skins removed and chopped
8 chicken portions
¼ C (60 ml) water
Salt and pepper, to taste
100 g soft dried apricots
½ packet (125 g) dried prunes
Finely chopped parsley, for garnishing


Instructions

Heat the olive oil in a saucepan and fry the onions until they start to brown. Add the garlic and fry (do not let the garlic brown). Add the curry powder, ginger, cinnamon and bay leaves and fry. Add the chopped tomatoes and fry lightly. Add the chicken portions and then the water. Cover and cook slowly for about 30 minutes. Add the salt, pepper and dried fruit. Cover again and cook slowly for 1 hour.

Serve on a bed of basmati rice and sprinkle with finely chopped parsley.
