Westin  Cape Town has recently appointed  Stephen Mandes to head up the kitchen at its flagship restaurant – ON19, located on the 19th floor of the hotel and with a spectacular bird’s eye view of the city. Along with taking over the reigns of the restaurant, Stephen will be curating the menus for the popular One Cultivar dinner series.

Meet Chef Stephen Mandes

Prior to joining the ON19 team, Mandes spent time in hotel and restaurant kitchens around the city,  including that of the Mount  Nelson Hotel, the Cape Grace,  Mondiall Kitchen & Bar, Restaurant  Jardine and de Grendel Wines. The 30-year  old culinary arts graduate and 2014 winner of the Ultimate Braai Master confesses he is driven by new challenges and constant change.

“For me, cooking has always come naturally. I am fortunate,  I get to cook amazing dishes and perfect my craft every day, no two days are the same, he says. Stephen’s inspiration comes from the intimacy of cooking, living his passion and his love for food.

Best-known  as the ceiling  of the city for  its panoramic views  of Table Mountain and  Devil’s Peak ;ON19 is well-known  for its focus on quality ingredients  to deliver bold and fresh flavours, and  for collaborating with some of Cape Town’s  most renowned wine farms to pair the unique flavours  of a single dish with One Cultivar.
