Mediterranean Chicken Tray Bake

Description

A super easy, one-tray dinner that is packed with Mediterranean flavour.


Ingredients

Tray Bake

olive oil for drizzling
3 Tbsp (45 ml) red wine vinegar
Cape Herb & Spice Mediterranean Roasts Seasoning
2 red onions, peeled and quartered
300 g vine tomatoes or mixed baby tomatoes
a mix of 10 baby yellow and red peppers, halved and deseeded
200 g pitted black olives
a head of garlic
½ ciabatta loaf, torn into chunks
8 pieces of chicken (thigh and legs)

To Serve

100 g feta, crumbled (optional)


Instructions

Tray Bake

Preheat the oven to 180 ºC.

Place all of the ingredients into a large baking tray. Drizzle with olive oil and red wine vinegar. Season generously with Cape Herb & Spice Mediterranean Roasts Seasoning, then, using your hands, mix everything together to coat evenly in the spice, oil and vinegar. Nestle the chicken skin-side up in amongst the other ingredients and place the tray into the oven.

Bake for 40-45 minutes until the veggies are cooked and slightly charred and the chicken is golden.

For extra colour you can grill for 5 minutes but keep an eye on it.

To Serve

Remove the tray from the oven and sprinkle over the feta (if using) and serve.
