Description
A modern twist on avo toast, topped with fluffy grated eggs and a delicious soy-mayo drizzle. Enjoy for breakfast, lunch or any meal.
Ingredients
Soy-Mayo Dressing
1 Tbsp (15 ml) mayonnaise
1 tsp (5 ml) soy sauce
½ tsp (2,5 ml) sesame oil
Toast & Toppings
4 large Nulaid Free Range Eggs
250 g streaky bacon
4 slices sourdough bread, brushed with a little melted butter or olive oil*
1 ripe avocado
½ tsp (2,5 ml) lemon juice
Salt and black pepper, to taste
To Serve
1 tsp (5 ml) sesame seeds, lightly toasted
½ tsp (2,5 ml) chilli flakes (optional)
Instructions
Soy-Mayo Dressing
Whisk together the mayonnaise, soy sauce, and sesame oil. Set aside until ready to use.
Toast & Toppings
Bring a pot of water to a boil, carefully add the eggs and cook for 10 minutes. Transfer to an ice bath. Once cooled, peel and set aside.
Meanwhile, cook the bacon in an air fryer or a frying pan until crispy. Set aside.
Toast the sourdough slices in an air fryer or oven until golden and crisp. *Alternatively, toast dry in a toaster and butter afterwards.
Use a fork to lightly smash the avocado with lemon juice, salt, and black pepper – keep some texture for contrast – then spread evenly over the toast. Add streaky bacon slices to each.
Use a fine grater or microplane to grate the boiled eggs finely over the avocado, creating a generous pile on each slice.
To Serve
Drizzle the soy-mayo sauce over each slice of toast (tip: use a squeezy bottle). Sprinkle over the sesame seeds and chilli flakes, if using, and serve immediately.
