Gammon & Cheese Braaibroodjies

Description

Classic braaibroodjies filled with melty cheese, smoky gammon, and a tangy cherry BBQ drizzle. A great way to make the most of leftover gammon.


Ingredients

Black Cherry BBQ Glaze

1 C (250 ml) tinned black cherries, drained
½ C (125 ml) tomato sauce
¼ C (60 ml) brown sugar
2 Tbsp (30 ml) Worcestershire sauce
2 Tbsp (30 ml) apple cider vinegar
1 Tbsp (15 ml) Dijon mustard
1 tsp (5 ml) smoked paprika
Salt and freshly ground black pepper, to taste

Braaibroodjies

8 slices good-quality white farm bread
2 Tbsp (30 ml) softened butter, for spreading
¼ C (60 ml) mayonnaise
2 Tbsp (30 ml) Dijon mustard
1 C (100 g) mature cheddar, grated
1 C (100 g) mozzarella, grated
1 C (100 g) cooked gammon, thinly sliced


Instructions

Prepare a coal braai and allow it to come to medium heat. 

Black Cherry BBQ Glaze

Blitz the drained cherries together with all the remaining glaze ingredients until smooth. Pour into a small saucepan and allow to simmer for 8–10 minutes until thickened and glossy. Set aside.

Braaibroodjies

Spread one side of each bread slice with butter. Combine the mayonnaise and mustard to make the sauce. Lay four slices buttered-side down and spread the insides with the mustard-mayo. Top with cheddar, mozzarella, sliced gammon, and a drizzle of cherry BBQ sauce. Close with the remaining slices, buttered-side up.

Toast the braaibroodjies over medium-hot coals using a sandwich grid, turning often, until the bread is golden and crisp and the cheese has melted.

Serve immediately.
