Fruit with Vanilla & Honey Custard

Description

A simple dessert of fruit with a honey and vanilla custard is a nice light ending to any meal.


Ingredients

Custard

250 ml fresh cream
60 g honey
3 free-range egg yolks
½ fresh vanilla pod, seeds scraped

The Fruity Part

Figs
Blueberries
Raspberries
A little fresh mint
Flaked almonds
An extra dash of honey
(Use all your favourite fruits and nuts and play with your favourite flavour combinations.)


Instructions

To make the custard, place the cream and honey in a saucepan and bring to a light simmer. Place the egg yolks into a bowl and gently whisk the boiled cream mixture onto the egg yolks and return the saucepan to a very gentle heat. Finally stir in the vanilla pod.

Cook the mixture, stirring constantly, until it coats the back of a spoon. Strain through a fine sieve into a clean container.

Cover with plastic wrap so that it lies directly on the custard, to avoid a skin from forming.

Place in the refrigerator to cool for at least three hours before use.

To serve, place a few spoonfuls of the chilled custard onto two plates and arrange your chosen fruit on top of the custard and garnish with mint, nuts and an extra dash of honey.
