Breakfast Bacon Stack
If your mouth ain't watering from the talk of all this bacon this recipe isn't for you!

Ingredients
10–12 rashers bacon
2 onions, peeled and quartered
½ punnet (100 g) cocktail tomatoes
olive oil
For serving
12 ready-made pancakes
1 tub (300 g) ricotta cheese
2 Tbsp (30 ml) chilli jam
rocket leaves
6 hard-boiled eggs
Method
Set the oven to grill and preheat.
Arrange the bacon, onions and tomatoes on a baking tray and drizzle with olive oil. Grill until the bacon is crispy and the vegetables are roasted, about 20-30 minutes. Snap the bacon into smaller pieces and keep to one side along with the roasted vegetables.
Spread a small amount of ricotta onto a pancake, followed by about 1 tsp (5 ml) chilli jam. Scatter with rocket leaves and some bacon. Layer another pancake on top of this and repeat until done.
Top the stack with the roasted onions and tomatoes and serve with hard-boiled eggs on the side.
