Description
These Moroccan style burgers are easy to make and super tasty. A must-try!
Ingredients
good-quality braai marinade, for basting
4 pita breads (plain or wholewheat)
olive oil, for drizzling
Burgers
1 kg lamb mince
2 chillies, seeded and finely chopped
1 handful fresh coriander, finely chopped
1 large clove garlic, crushed
juice of ½ lemon
1 tsp (5 ml) ground cinnamon
1 tsp (5 ml) ground cumin
salt and pepper to taste
Tzatziki
8 mint leaves, finely chopped
1 small clove garlic, crushed
1 Mediterranean cucumber, seeded and finely chopped
1 tub (250 ml) Greek yoghurt
salt and pepper to taste
Toppings
1 handful fresh coriander
2 tomatoes, thinly sliced
1 red onion, thinly sliced
Instructions
Combine all the burger ingredients in a bowl and mix together. Divide into 4 equal portions and shape into burger patties about 15 cm across and 4–5 cm thick.
Braai the burgers over hot coals or in a hot griddle pan, brushing occasionally with the marinade. Cook on each side for 4–5 minutes.
To make the tzatziki, add the mint, garlic and cucumber to the yoghurt and mix well. Season to taste.
Toast the pita breads and slice open. Drizzle with olive oil and top with a burger. Place a good handful of coriander and some tomato and onion slices onto the burger and spoon a generous dollop of tzatziki over the top. Close with the other half of the pita.
