Mondiall Celebrates its 3rd Birthday with a New Summer Menu
Mondiall, the popular V&A Waterfront restaurant is celebrating its third birthday this month (November 2016) with the launch of an exciting new Summer Menu curated by talented Head Chef, Stephen Mandes.
Chef Mandes took up the reigns at Mondiall earlier this year; before that he clocked up extensive experience as chef proprietor of La Vierge Restaurant outside Hermanus. Mandes describes the new summer menu as:
‘An infusion of international culinary concepts to satisfy the curious palate. I love creating delicious food, but never stick to one template only. My focus is to use top quality produce to create healthy, flavoursome and visually stimulating meals to satisfy both South African and international tastes.’
New on the Summer Menu are dishes ranging from Seafood Ceviche with fresh sweetcorn salsa and crisp taco; and Prawn & Leek Roulade with lentil salad, sugar snap peas and lime aioli; to Spice Crusted Seared Tuna with romesco sauce, crushed new potatoes and gremolata; and Organic Lamb Duo of loin and braised lamb neck served with shaved vegetables and minted jus; ending off on a sweet note with Nutella Cheesecake with honeycomb and berries.
An expert in ‘cooking over coals’, Mandes uses a Big Green Egg charcoal barbecue cooker in the Mondiall kitchen to create enticing smoked flavours. His menu incorporates influences from all over the world, as he takes the diner on an adventure to explore the best each cooking style has to offer, from Europe to Asia and crossing over to America. A singular dish can therefore be ‘well-travelled’ – incorporating elements such as apple puree (German) and kimchi (Korean) into the American-style Smoked Pork Belly, another new dish on the menu.
He says he draws inspiration from Mediterranean cuisine, but also enjoys revisiting food memories from his childhood, using modern culinary skills to recreate timeless classics presented in a fresh, contemporary way.
The new menu therefore offers many plays on proudly South African traditions such as ‘tea and biscuits’ served as a Rooibos & Honey infused Créme Brûlée with peach textures and shortbread fingers; and a deconstructed Lime Meringue with coconut, almond and fresh strawberries.
Mondiall offers diners an all-round quality experience, ranging from the variety on the menu, to the sophisticated décor and majestic view of Table Mountain and the harbour. Its modern Brasserie style setting perfectly captures the essence of Cape Town through warm and welcoming service, a touch of elegance and a truly global atmosphere, where local and international guests mingle and enjoy the restaurant as a home-away-from-home. Offering a wide range of choice, the wine list features a variety of cultivars and vintages, consisting predominantly of South Africa’s top wine labels that are exclusively selected to ensure that the cuisine is complemented by the best quality wines. Juices and cocktails are popular too, including the Mondiall Iced Tea containing grapefruit, chai puree, lemon and litchi juice, and the Smoked Margarita with tequila, citronge, lime juice and uniquely smoked Maldon salt as signature cocktail – perfect as sundowner to toast the summer season.
