Homemade Rooibos Iced Tea

Description

Cooling and refreshing


Ingredients

1/2 C (125 ml) sugar
1/2 C (125 ml) water
1/4 C (60 ml) lemon juice
2 rooibos tea bags
a few slices of fresh ginger
2 stalks lemon grass
ice cubes for serving
sparkling water
lemon wedges and fresh mint for garnishing


Instructions

Place the sugar, water and lemon juice into a saucepan and bring to the boil. Add the tea bags, the ginger and the lemon grass and simmer for a few minutes until reduced to half. Cool completely by adding ice cubes. Pour into a glass jug and top up with ice-cold sparkling water. Garnish with lemon wedges and mint.
