An easy way to bring a bit of Thailand into your kitchen.


Ingredients

For the Thai Style Fish
2 silver fish, gutted and cleaned
1 lemon, thinly sliced
small handful fresh coriander
2 red chillies, sliced
2 stalks lemongrass, cut into strips
salt and pepper for seasoning
2 Tbsp (30 ml) olive oil
3 mandarins, unpeeled and cut in half
3 Tbsp (45 ml) Natura Light Muscovado Sugar


Instructions

To Make the Thai Style Fish

Preheat the oven to 180 °C.

Place the fish onto a large baking tray; stuff the cavities with slices of lemon and fresh coriander leaves. Sprinkle the chilli and lemongrass over the fish, season and drizzle with olive oil.

Place the mandarin halves around the fish and sprinkle the Natura Light Muscovado over the fish and the mandarins.

Bake for 20-25 minutes, until the fish is cooked through and flaky. Serve immediately.
