There’s a particular magic to summer evenings in Stellenbosch – when the heat eases, shadows stretch, and the day quietly gives way to night. DUSK restaurant captures that feeling exactly – while the light lingers outside, darkness settles within, setting the stage for an immersive dining experience that gently ushers you from day into evening.

Conceived by chefs Darren Badenhorst and Callan Austin, the restaurant is an intimate space seating just 30 diners. Strategically placed downlights illuminate white-clothed tables, creating a insular experience and at times it feels like you are the only table there.

The open kitchen offers glimpses of the action behind the scenes. You won’t find shouting, TV-show chaos here; instead, there’s orchestrated precision from a tightly in-sync team that knows exactly what it’s doing.

This is the kind of quiet confidence you’d expect from a restaurant that has earned Eat Out’s highest accolade of three stars every year since becoming eligible, along with being named Best New Restaurant in its debut year. But what sets DUSK apart isn’t just technical excellence, it’s Chef Callan’s willingness to infuse his cooking with personality, nostalgia, and a refreshing sense of mischief.

Breaking Bread

The meal begins with Japanese milk bread, its surface beautifully glazed. It arrives with smoked lamb fat and amasi cultured butter – a clever nod to South African culinary traditions, thoughtfully reinterpreted. The bread is impossibly soft, light as a feather, yet sturdy enough to carry the richness of the butter.

An Ode to a Loyal Companion

Then came a dish that connected with us, being dog parents ourselves. A Man’s Best Friend is wagyu tartare with bone marrow, nestled in a sablé biscuit shaped like a dog bone and finished with black garlic emulsion. But there’s a deeper story here. Three years ago, Callan adopted his first dog, Teddy, from the Animal Welfare Society Stellenbosch. Coming home to Teddy’s unconditional love, amid the intensity of restaurant life, is what sparked this thoughtful collaboration.

After spotting Clay Café Paarl’s paint-your-own dog bowls, Callan saw an opportunity to serve the dish in those very ceramics – something playful and unexpected, but with purpose. Beyond the clever concept, the dish itself is exceptional. The tartare is pristine, the bone marrow emulsion adds richness without overwhelming, and the Catherine Marshall Riesling pairing – which we loved – cuts cleanly through it all. It’s a dish that makes you think and feel, while delivering on flavour in a way that exemplifies dining at this level. The collaboration also highlights the ongoing work of AWSS, making it a fitting and meaningful tribute.

From the Coast to Summer Fruits

The pace shifts with Coastal Fynbos – tuna, cucumber, lime leaf snow, lime panna cotta, spekboom, and spiced avocado milk. It’s beautifully light and fresh. The spekboom adds a subtle minerality, a distinctly South African tang that gently reminds you where you are.

Summer Fruits follows, and it’s here that the DUSK team’s technical skill truly shines. Strawberries, ricotta, Madeira wine jelly, and clarified gazpacho come together seamlessly. The gazpacho alone takes five days to make, using a careful drip process and 17 different species of tomatoes (who knew there were that many?). Completely colourless, it belies the depth of flavour it delivers. You could bottle it and drink it with a straw – it’s that good.

But what sets DUSK apart isn’t just technical excellence; it’s Chef Callan’s willingness to infuse his cooking with personality, nostalgia, and a refreshing sense of mischief.

A Commitment to Sustainability

Second Hand Shellfish speaks to DUSK’s commitment to sustainability and a zero-waste philosophy. The kitchen collects prawn shells and shellfish offcuts from sushi and seafood restaurants around Stellenbosch, transforming what would otherwise be discarded into a rich, freshly made stock for a pomodoro sauce. The result is a dish far greater than the sum of its parts, and a tangible expression of the ethos that earned Callan the S.Pellegrino Social Responsibility Award at the 2021 Young Chef competition.

Steamed by the Sea features kabeljou marinated in misoyaki, wrapped in kombu and smoked. As it cooks, the fish steams gently, absorbing flavour while remaining tender and perfectly cooked. It’s topped with slices of seasonal peach and finished with smoked salmon dashi. The balance of smoky umami and sweet-tart fruit is inspired.

Wash Your Mouth Out With Soap

Before the main courses arrive, we were presented with Wash Your Mouth Out With Soap, a fun tongue-in-cheek palate cleanser. I won’t give all the details away, but beneath the playful presentation a grapefruit and rose sorbet delivers a sharp, cleansing hit, with honey and ginger foam adding aromatic depth. It’s a reminder that fine dining doesn’t need to take itself too seriously.

Main Attraction

The meat course, Patience Is Power, features Kalahari beef aged for three months. The sirloin is cooked to perfection – tender, deeply flavoured – and served with fresh blackberries that cut through the richness, alongside beef jus and bone marrow. It’s straightforward and magnificent, allowing the quality of the ingredient to speak for itself. The ageing process concentrates the flavour without overpowering it: pure, beefy excellence.

Pole Position

Dessert brought another smile – particularly from my husband. Pole Position is Chef Callan’s tribute to his love of Formula 1, featuring berries, orange namelaka, peanut, and nitro-poached Lucky Charms. Given that Lando Norris went on to win his first F1 Drivers’ Championship in the final race of 2025, just weeks after we dined, this one looks likely to stay around for a while. The dessert is textural and playful, with nostalgic crunch. Sophisticated without taking itself too seriously – a theme at DUSK.

What makes DUSK exceptional isn’t just the food, though every course delighted us. It’s the totality of the experience: the seamless work of the service team, thoughtful wine pairings, and an intimate space that makes you feel like you’ve been let in on a secret. Chef Callan’s menus are built on storytelling, childhood memories, subtle social commentary, and a sense of mischief that adds warmth and depth.

The partnership between Darren Badenhorst, with decades of experience including his acclaimed Le Coin Français in Franschhoek, and Callan Austin strikes a rare balance. Together, they’ve created something genuinely special in Stellenbosch: a restaurant that pushes boundaries.

Chef Callan’s menus are built on storytelling, childhood memories, subtle social commentary, and a sense of mischief that adds warmth and depth.

In an industry often criticised for being inaccessible or overly formal, DUSK offers something different. It proves that high-end dining can be technically brilliant without being precious, meaningful without being heavy, and fun without losing depth. It’s successful not because it tries to impress, but because it knows exactly what it’s doing.
