Vanilla & Strawberry Jelly Sand Cups

Description

This dessert is totally kid-approved (yes, we checked!) and is a fun holiday treat that will no doubt become a favourite – think jelly and custard just a few levels better.


Ingredients

Layered Sand Cups

1 packet of raspberry jelly, liquid prepared according to the packet instructions
½ packet of Tennis biscuits, finely crushed
1 ½ C First Choice Velvet Vanilla Flavoured Dairy Dessert, chilled overnight
1 ½ C First Choice Velvet Strawberry Flavoured Dairy Dessert*, chilled overnight (optional)

Topping Ideas

fondant characters
sprinkles (variety of shapes and colours)
jelly teddies
jelly rings
cocktail umbrellas


Instructions

Prepare the jelly according to the instructions and then divide it equally amongst your cups. Place the cups into the fridge to set fully.

Add the chilled vanilla dessert to the bowl of a stand mixer and whisk on high for 5 minutes until whipped. We opted to use the strawberry flavoured dairy dessert as well but the recipe will be just as tasty with just vanilla. If using the strawberry dessert, whip this on high for 5 minutes separately.

To assemble the cups, add a layer of finely crushed biscuits to the top of the jelly layer. Top with a generous layer of whipped vanilla dairy dessert. Repeat the biscuit layer and then another layer of whipped dairy dessert (vanilla or strawberry). Repeat until the cups are almost full but ensure that you have enough space for a final biscuit layer for your beach. Top the cups with a sandy beach layer and then refrigerate until ready to serve.

Just before serving, decorate with your sweets and cocktail umbrellas. Be imaginative, you can use any character sweets that work and make for a fun beachy scene.
