‘Tis the Season to Entertain with Cape Herb & Spice

Words: Crush

The festive season is fast approaching and this year we can thankfully look forward to large(r) gatherings than last year. We’ve all missed big family lunches and ‘friendsmas’ celebrations and many of us can’t wait to dive into our cookbooks to start planning our festive menus.

‘Tis the Season to Entertain with Cape Herb & Spice

Cape Herb & Spice have made it super easy to add loads of flavour to larger dishes without having to worry about 72-hour long marinades or dry rubs. A simple Cape Herb & Spice seasoning is all you need to make a good meal taste great and have your guests thinking you’ve been working on it for days.

We’ve developed these four recipes for you to add to your festive season menu. All are perfect for entertaining as they are not only easy to prepare but also easy to serve.

Lamb Staanrib with Mint & Caper Salsa Verde

Lamb ribs are delicious, but you have to know how to cook them properly. The secret to success is knowing how to render the fat enough so that you’re left with a wonderfully tender piece of meat and crispy outer layer of lamb crackling. This rich cut of meat needs some acidity to balance it out, so we’ve added a minty salsa verde to drizzle over just before tucking in. The brininess of the capers and the freshness of the herbs adds just the right balance. To give this staanrib epic flavour, we’ve rubbed with Cape Herb & Spice Smokey BBQ Braai, a blend of smoky spices that add a delicious depth of flavour to your meat.

Cooking the lamb upright (hence staanrib) keeps it away from direct heat so that it cooks slowly, giving the fat time to render.

Pork Ribs with BBQ Sauce & Charred Lemons

Okay, so this recipe requires an overnight marinade, but when we say ‘marinade’ we mean putting all the ribs into a baking tray with 1,5 litres of Coke and putting it in the fridge — that’s easy enough, right? The distinct BBQ flavour in the sauce is courtesy of Cape Herb & Spice Smokehouse BBQ Seasoning, a blend of paprika, cumin and coriander, which provides just the right amount of smoke.

These are sweet, sticky and smokey and will be a hit at the party table.

Braai Whole Yellowtail with Rocket Salad & Creamy Greek Dressing

Serving up a whole braaied fish can sound daunting, but in this recipe, the braai does most of the work for you and sprinkle of Cape Herb & Spice Greek Lemon & Herb Seasoning provides delicious flavour. You’re left with a perfectly cooked, deliciously seasoned showstopper of a dish.

We recommend sticking to yellowtail for this recipe as it has a strong enough flavour to hold its own against the smoke of the braai.

Miso Butter Charred Onion Potjie

These onions are flavour bombs of umami! Inspired by Ottolenghi, we’ve riffed on his recipe by adding a little local flavour with a potjie twist. Firstly, we sprinkle the onions with Cape Herb & Spice Veggie Seasonings Roast which add sweet, savoury and warm notes. Then we char them on the braai to get the caramelisation started before putting them in a potjie pot with lots of butter and miso paste (yum!) to get that unctuous caramel consistency that only onions can give.

Serve the onions with the toasted baguette  – the ideal vessel for scooping up onions and mopping up that delicious miso sauce.
