Description

A perfect recipe to make as a gift. Not only do they look good, but taste delicious too.


Ingredients

Red Velvet Petit Four Cake

125 g softened butter
250 g castor sugar
2 extra-large eggs
200 g cake flour
15 g NoMU Cocoa Powder
1 tsp (5 ml) baking powder
½ C (125 ml) buttermilk
¼ C (60 ml) red food colouring

Icing

50 g butter
250 g Philadelphia, cream cheese
250 g icing sugar, sifted
1 Tbsp (15 ml) NoMU Vanilla Paste
½ a vanilla pod, cut into
4 for garnish


Instructions

Red Velvet Petit Four Cake

Preheat the oven to 180 °C.

Grease and line a 30 x 20 cm Swiss roll pan.

Using a stand mixer cream the butter and sugar together. Add the eggs one at a time and beat until pale and fluffy.

Sift the dry ingredients.

Mix the food colouring and buttermilk together.

Fold all of the ingredients together and pour the mixture into the prepared pan and flatten with a spatula. Bake the cake for 15 – 20 minutes, or until cooked through. If you touch the cake lightly it should spring back when cooked. Remove from the oven and set aside to cool.

Once cooled, cut the cake into 16 small squares.

Icing

Cream the butter and cream cheese together.

Add the sifted icing sugar and vanilla paste. Don’t over mix as the mixture can become runny.

Dollop or pipe the icing onto the top of each square.

Package 4 red velvet petit fours into a box and garnish each square with a slither of vanilla pod.
