Pork Ribs with Apple-Butter BBQ Sauce

Description

Sticky, smoky pork ribs grilled low and slow, slathered in a rich, spiced homemade apple-butter BBQ glaze.


Ingredients

Apple Butter

10 medium Pink Lady® apples, peeled, cored and cubed
1 C (250 ml) good-quality pressed apple juice
1 C (200 g) brown sugar
2 tsp (10 ml) ground cinnamon
2 Tbsp (30 ml) lemon juice
Pinch of salt

Apple-Butter BBQ Glaze

1 C (250 ml) apple butter (recipe above)
½ C (125 ml) tomato sauce
2 Tbsp (30 ml) apple cider vinegar
1 Tbsp (15 ml) Dijon mustard
1 Tbsp (15 ml) Worcestershire sauce
½ tsp (2.5 ml) smoked paprika
Salt and black pepper, to taste

Ribs

2 kg loin pork ribs
¼ C (60 ml) BBQ spice mix
6 C (1.5 L) beef stock

To Serve

1 Pink Lady® apple, cored and cut into small cubes
90 g pickled red onion
1 Tbsp (15 ml) finely chopped chives
2 limes, cut into wedges


Instructions

Apple Butter

To make the apple butter, add the chopped apples and apple juice to a medium pot. Cover and simmer over medium heat for 20–25 minutes until soft. Use a hand blender to purée the mixture until smooth, then return it to the pot. Add the brown sugar, cinnamon, lemon juice and salt. Simmer uncovered over low heat for 60–90 minutes, stirring often, until thickened and dark.

Apple-Butter BBQ Glaze

Combine the apple butter, tomato sauce, vinegar, mustard, Worcestershire sauce, smoked paprika, salt and pepper in a small pot. Simmer for 10–15 minutes, stirring occasionally, until thick and glossy.

Ribs

Season the ribs generously with the BBQ spice mix. Place the ribs into a pressure cooker with the stock. Lock the lid and cook on high pressure for 10 minutes. Allow the pressure to release naturally for 10 minutes, then manually release the remaining steam. The ribs should be tender, but not falling apart.

Preheat the grill to high or the oven to 220 °C (fan 200 °C). Place the ribs on a foil-lined tray. Brush generously with the glaze and grill for 15–20 minutes, turning and basting once, until sticky and caramelised.

To Serve

Garnish the ribs with a sprinkle of apple cubes, pickled red onion and chopped chives for freshness, and serve with lime wedges for squeezing over.
