Description
Tender pork skewers marinated and air-fried to juicy perfection. Enjoy this Thai street food favourite with a sweet-and-spicy dipping sauce and fragrant rice.
Ingredients
Moo Ping Thai Pork Skewers
1kg boneless pork shoulder, skin removed
30 g coriander
4 garlic cloves, roughly chopped
2 Tbsp (30 ml) brown sugar
½ tsp (2,5 ml) white pepper
2 Tbsp (30 ml) fish sauce
1 Tbsp (15 ml) dark Soy sauce
¼ C (65 ml) coconut milk
½ C (125 ml) cornflour
Metal or bamboo skewers (soaked in water to prevent burning)
Dipping Sauce
⅓ C freshly squeezed lime juice
2 Tbsp (30 ml) fish sauce
1 tsp (5 ml) sambal oelek
2 Tbsp (30 ml) brown sugar
1 Tbsp (15 ml) finely grated garlic
1 red chilli, finely sliced
1 small spring onion, very finely chopped
½ tsp (2,5 ml) dried basil
1 Tbsp (15 ml) finely chopped coriander
To Serve
200 g sticky rice, cooked per package instructions
1 spring onion, green part only, sliced on the diagonal
1 Tbsp (15 ml) chopped chives
10 g fresh coriander
2 fresh limes, cut into wedges
Instructions
Moo Ping Thai Pork Skewers
Preheat the Instant Vortex Air Fryer Oven on the air fry setting to 180 ºC.
Slice the pork shoulder into thin strips along the length of the shoulder and set aside.
In a blender, combine the coriander, garlic, brown sugar, white pepper, fish sauce, dark Soy sauce, and coconut milk. Blend until smooth, then transfer to a large bowl.
Lightly dust the pork strips in cornflour, then add them to the marinade. Toss to coat evenly and let the pork marinate for at least 2 hours.
Dipping Sauce
Mix everything together in a bowl, cover and set aside. Leave for at least 2 hours or overnight to infuse.

Thread the marinated pork onto metal or soaked bamboo skewers in a concertina-style (accordion-like), folding the pork strips and threading as you go.
Arrange the skewers in the air fryer and cook for 20–25 minutes, turning and basting halfway through, until the pork is golden and juicy.
Serve the skewers with sticky rice and sweet-spicy dipping sauce.
