Hand pies are just the right size for picnics and these classic flavour combinations give you bite-size enjoyment!
Ingredients
Filling
1 Tbsp (15 ml) olive oil
1 Tbsp (15 ml) butter
4 medium leeks, cleaned and sliced
1 tsp (5 ml) fresh thyme
salt and freshly milled black pepper
100 g goat’s cheese
Pastry
2 x 400 g rolls ready-made puff pastry
1 egg, lightly beaten
2 Tbsp (30 ml) milk
Instructions
Preheat the oven to 180 °C.
Heat the oil and butter in a large pan and fry the leeks and thyme until they just start to brown. Season with salt and pepper. Allow to cool and then mix in the goat’s cheese.
On a lightly floured work surface, unroll one roll of puff pastry. Cut out eight x 7 cm rounds and place them on a baking tray lined with baking paper. Place a dollop of the leek mixture on top of each round.
Unroll the other roll of puff pastry and cut out eight x 8 cm rounds and place them over the leek mixture. Crimp the edges with a fork.
Beat the egg and milk together and brush the tops of the hand pies. Cut a small cross in the top of each pie. Bake for 25–30 minutes or until golden brown. Serve at room-temparature.
