Fresh Oysters with Caviar & Pickled Ginger Vinaigrette

Description

A freshly shucked oyster is the ultimate amuse bouche, elegantly enjoyed with Krone Night Nectar Blanc De Blancs 2018.


Ingredients

Vinaigrette

3 Tbsp (45 ml) olive oil
1 Tbsp (15 ml) red wine vinegar
1 Tbsp (15 ml) pickled ginger brine
1 garlic clove, very finely minced

Oysters

12 large, shucked (top tip: ask for them to be shucked when you order them online)

To Serve

1 x 100 g tub of lumpfish black caviar
fennel flowers, picked
lemon zest
1 Tbsp (15 ml) finely chopped chives


Instructions

Vinaigrette

Add the vinaigrette ingredients to a small bowl and whisk to combine. Taste and adjust the seasoning and then set aside.

To Serve

Arrange the shucked oysters on a serving platter or on a bed of ice chips. Spoon a little vinaigrette onto each oyster, then top with a dollop of black caviar. Garnish with lemon zest, fennel flowers and chives. Season with a little salt and pepper and serve.
