Crisp Baby Leaf Spinach with a Truffle, Parmesan and Soy Dressing

A tasteful salad with a wonderful surprise!
Ingredients
1 Tbsp (15 ml) truffle oil
1 lime
2 tbsp (30ml) grated Parmesan cheese
2 tsp (10 ml) soy sauce
300 g baby leaf spinach, washed
½ packet (25 g) salted peanuts, roughly chopped, for garnishing
Instructions
To make the dressing, place the truffle oil, a squeeze of lime juice, half the grated Parmesan and the soy sauce into a bowl and whisk to combine. Arrange the spinach leaves on a platter and toss with the dressing.
Garnish with the remaining grated Parmesan and chopped peanuts.
