Cheese, Ham & Caramelised Onion Croissant Bake

Description

Chunks of buttery croissant with Gypsy ham, cheese and caramelised onion, layered with egg custard. Brunch doesn’t get more delicious than this!


Ingredients

Caramelised Onion

2 large white onions, peeled and thinly sliced
drizzle of olive oil

1 Tbsp (15 ml) butter
1 Tbsp (15 ml) sugar

Croissant Bake

6 croissants, torn into 34 pieces each
6 large Nulaid Free Range Eggs
C (375 ml) milk
1 C (250 ml) double thick cream
1 Tbsp (15 ml) wholegrain mustard
1 tsp (5 ml) salt
a crack of black pepper
1 C (250 ml) grated white cheddar cheese
½ C (125 ml) grated Gruyère cheese
250 g Gypsy ham

To Serve 

1 Tbsp (15 ml) finely chopped fresh chives
1 Tbsp (15 ml) Everything Bagel Sprinkle (optional)


Instructions

Caramelised Onion

Heat a saucepan over medium heat and add the olive oil. Once heated, add the sliced onions and cook slowly, stirring every so often to prevent catching. When the onions have softened, add the butter and sugar, and reduce the heat to low. Cook, stirring occasionally, for about 30 minutes or until the onions are a dark golden brown and well caramelised.

Croissant Bake

Preheat the oven to 180 ºC.

Add the torn croissant pieces to the baking dish. Add the milk, cream, eggs, mustard, salt and a good crack of black pepper to a large jug. Whisk lightly with a fork to break the yolks and combine the mixture. Add ¾ of the total amount of cheese (cheddar and Gruyère, mixed) to the egg mixture, reserving the rest for garnish.

Tuck the ham slices in between the chunks of croissant, and then evenly dot around spoonfuls of caramelised onion. Pour the egg mixture over the croissants, and then sprinkle the remaining cheese on top.

Cover the dish with foil and bake for 40-45 minutes, until the egg custard is set. For the last 10 minutes, remove the foil and allow the top to brown.

To Serve

As the dish comes out of the oven, sprinkle over the Everything Bagel spice mix, then garnish with chives and serve.
