Braaied Chicken Caesar Salad Tartine (Open Sandwich)

Description

We know this is not technically a salad, but it’s close enough. Just think of the toasted bread as one big crouton.


Ingredients

The Caesar Dressing

2 egg yolks
1 Tbsp (15 ml) Dijon mustard
¼ C (60 ml ) olive oil
1 C (250 ml) canola oil
4 anchovies, minced
2 garlic cloves, minced
¼ C (60 ml or roughly 100 g) Parmesan cheese
Juice of ½ a lemon
Salt and pepper

The Chicken

1 large free range chicken, jointed
Sea salt
Lemon pepper
Olive oil for drizzling

To Assemble

6 slices of sourdough bread, toasted
1 packet cos lettuce
8 slices of streaky bacon, fried or braaied til crispy
Parmesan, shaved


Instructions

The Caesar Dressing

Place the egg yolks and the mustard into a large mixing bowl. Whisk to combine then slowly add the olive oil, while whisking. Once the mixture has emulsified, slowly add the canola oil while constantly whisking to form a thick mayonnaise. Mix in the garlic, anchovies, Parmesan and lemon juice, until combined. Season to taste and pop the dressing in the fridge. If the dressing is a little too thick, thin with a splash of water.

The Chicken

Preheat the oven to 180 °C.

Season the chicken with salt and lemon pepper and drizzle with olive oil. Pop the chicken into the oven and roast for 20 minutes. Remove the chicken from the oven until you are ready to finish the chicken on the braai.

Braai the chicken over medium-hot coals and baste with any juices that remain in the roasting tray. Remember, the chicken is already par-cooked so you only need to braai the chicken for 5-10 minutes to give it colour and to finish the cooking process. Once the chicken is cooked, allow it to cool slightly and then strip the meat off the bones and roughly chop.

To Assemble

Spread the dressing onto the slices of toasted bread and top with lettuce. Pile on some chicken and top with shards of crispy bacon and shaved Parmesan. Season and finish with another generous drizzle of Caesar dressing. Tuck in.
