Try this Recipe for Chorizo, Olive & Avocado in Spicy Sauce

To add the health benefits of avocado to your weekly meal rotation, try this tasty dish that’s easy to prepare as a midweek brunch or light supper.

Preparation time: 15 minutes
Cooking time: 15 minutes
Ingredients
Avocado or olive oil for cooking
50g butter
200g chorizo sausage, thinly sliced
½ onion, thinly sliced
Salt and pepper
3 garlic cloves, crushed
1 red chilli, finely chopped, plus extra to serve
50g sachet tomato paste
125ml (½ cup) white wine
250ml (1 cup) chicken stock
100 g packet Kalamata olives, drained
1 avocado, chopped
Zest and juice of ½ lime
Handful of coriander
Toasted baguette, to serve
Method
Heat a splash of oil and the butter in a medium frying pan over medium-high heat until melted. Stir through the chorizo and cook for about 3 minutes or until starting to crisp.
In the same pan, stir through the onion and fry for 5 minutes or until golden. Season with salt and pepper. Add the garlic and chilli and fry for 1 minute.
Stir through the tomato paste. Add the wine and stock and bring to a simmer. Add the olives.
Remove from the heat. Scatter over the avocado, lime zest and juice, extra chilli slices and coriander. Serve with a baguette.
