Warm Milk Tart-flavoured Chia Seed Pud

Description

Chia seeds are fantastic! They’re worth paying a bit extra for at health stores as they are healthy, surprisingly tasty, low carb and have a natural thickening quality that makes them the perfect ingredient for desserts.


Ingredients

1 tin (400 ml) coconut milk
1 tin (400 ml) coconut cream
23 C (160 ml) full cream milk
seeds from 1 vanilla pod
1 tsp (5 ml) ground cinnamon
13 C (80ml) xylitol granules
23 C (160 ml / 130 g) chia seeds
whipped cream, for serving
ground cinnamon, for garnish


Instructions

Heat the coconut milk, coconut cream, milk, vanilla seeds, cinnamon and xylitol in a heavy-based saucepan over gentle heat. Stir continuously while heating. Remove from the heat as soon as it starts to boil. Stir in the chia seeds, cover with a lid and allow to stand for 15 minutes.

Serve each portion with a dollop of whipped cream and a sprinkling of cinnamon.

TIP: The coconut cream and milk can be replaced with normal milk and cream if your diet allows it. Almond milk can also be used, but will result in a less creamy dessert.
