Smoky Harissa
This spicy Tunisian paste is a bright blend of spices and charred red pepper, making it a delicious addition to any meal. Swirl into cream cheese or hummus and enjoy as a dip for potato crisps. Revamp tomato-based pasta sauces with a spoonful, or combine with African Gold Extra Virgin Olive Oil and use as a marinade for grilled chicken, lamb, or vegetables.
Ingredients
2 large red peppers
1 Tbsp (15 ml) cumin seeds
2 Tbsp (30 ml) coriander seeds
2 tsp (10 ml) fennel seeds
1 Tbsp (15 ml) paprika
1 Tbsp (15 ml) smoked paprika
1 Tbsp (15 ml) dried chilli flakes
6 garlic cloves, peeled
200 g tomatoes, peeled and chopped
2-3 fresh red chillies
¼ C (60 ml) African Gold Extra Virgin Olive Oil
salt and pepper, to taste
To Serve
tortilla or potato chips
Method
Preheat the oven; set to grill.
Halve the peppers, scoop out the seeds and place on a greased, foil-lined baking sheet.
Drizzle the peppers with a dash of olive oil, then load the baking tray into the oven. Grill for 10–15 minutes, or until the skin is charred and the flesh is soft.
Remove from the oven and allow to cool before peeling the blackened skin off the pepper.
Meanwhile, dry fry your cumin, coriander and fennel seeds in a pan. Once toasted, blend the spices using a spice grinder (or mortar and pestle) until finely ground.
Place all the ingredients into a blender and blitz until fine. Add salt and pepper to taste, and blend again.
Spoon the harissa paste into a bowl. Enjoy as is with tortilla or potato chips, or combine 1-2 tablespoons (depending on desired spiciness) with a small tub of cream cheese or hummus.
Herby Olive Bread Dip
This is the best way to serve crusty bread! You won’t be able to stop dunking into this olive-and-herb-packed dip. Served with a classic ciabatta, it’s incredibly moreish and ideal for entertaining guests.
Dip Ingredients
1 C (250 ml) African Gold Extra Virgin Olive Oil
½ C (125 ml) Kalamata olives, de-pitted and finely chopped
½ C (125 ml) green olives, de-pitted and finely chopped
2 tsp (10 ml) Egyptian dukkah
1 tsp (5 ml) dried oregano
1 tsp (5 ml) smoked paprika
1 garlic clove, peeled and minced
To Serve
crusty ciabatta bread
Method
Mix all the dip ingredients in a bowl and allow to stand for at least an hour before serving. This allows time for the ingredients to infuse the olive oil.
Once ready to serve, slice the ciabatta loaf into thick slices and plate alongside the dip.
