
Bunless Chicken Burgers with Roasted Garlic Mayo
Ditch the carbs with these fresh chicken burgers with lettuce in place of a bun. We've added a roasted garlic mayo for a flavour hit. Yum!

Ingredients
Garlic Mayo
olive oil
salt and pepper
½ C (125 ml) mayonnaise
zest and juice of 1 small lemon
salt and pepper
Chicken
olive oil
4 large boneless, skinless chicken breasts, butterflied open
To Assemble
1 large head of butter lettuce
2 tomatoes, thinly sliced
1 large avo, thinly sliced
1 lime, quartered
micro herbs to garnish
salt and pepper
Method
Start a medium sized fire so that the coals are ready to cook over when the garlic mayo is done.
Garlic Mayo
Preheat the oven to 180 ºC.
Drizzle the exposed top of the garlic head with olive oil and season with salt and pepper. Wrap it up in a small piece of foil and place it into the oven. Roast for 30-40 minutes or until the garlic is soft. Allow to cool, then squeeze the garlic into the mayo. Add the lemon zest and juice then season and mix well to combine. Refrigerate until needed.
Chicken
Drizzle the butterflied chicken breasts with olive oil and season with braai spice. Braai the chicken breasts over medium-hot coals for 4-5 minutes per side or until cooked through and caramelised.
To Assemble
Lay two pieces of butter lettuce onto a serving plate, then top with slices of red onion and tomato. Give the tomato a dollop of mayo and spread it out. Place a warm chicken breast on top, then finish with avo slices and micro herbs. Top the chicken ‘burger’ with extra butter lettuce leaves and enclose, using the lettuce leaves to replace a traditional bun. Serve with lime wedges for squeezing over just before eating.
