**Quick Asparagus and Feta Lasagne** Needs Fixing

Description

A simple yet oh so delectable asparagus and feta lasagne.


Ingredients

6 egg lasagne sheets
250 g fresh asparagus, trimmed
2 Tbsp (30 ml) vinegar
2 large eggs
1 lemon
200 g Danish feta, cubed
Cheese sauce
2 Tbsp (30 ml) butter
2 Tbsp (30 ml) flour
1 C (250 ml) milk
1 C (250 ml) grated cheese (a mixture of mature cheddar, Gruyère and Parmesan)
salt and pepper


Instructions

Cook the lasagne sheets in salted boiling water until soft, then toss in olive oil to prevent them from sticking together and keep to one side. In the same boiling water, cook the asparagus for 3 minutes, then refresh in cold water and keep to one side.

Heat another pot of water and add the vinegar. Create a whirlpool in the water and crack the eggs, one at a time, into the water, guiding them with the back of a spoon, and boil uncovered for about 3 minutes. Remove the eggs, place in a bowl of cold water and keep to one side.

Grate the zest of the lemon and place in a bowl together with the asparagus and feta. Cut the lemon in half, add the juice of one half and mix to combine. Keep the other half to one side.

Cheese  sauce

Make a roux with the butter and flour, then gradually whisk in the milk, whisking continuously until thickened. Remove from the heat and add the cheese, stirring until smooth. Add the juice of the remaining half of the lemon, and stir again until smooth. The sauce will be thicker than a normal béchamel. Season with salt and pepper.

Preheat the oven grill.

To assemble

Place a pasta sheet onto a serving plate and top with some asparagus mixture, followed by some sauce. Repeat, ending with the third piece of pasta and top with a poached egg. Cover with a generous layer of sauce. Do the same on the second serving plate. Place under the grill for no longer than a minute or use a blowtorch, or even serve as is. You could prepare this on a platter if you wish.
