Description

The tastiest pork dish paired with pears.


Ingredients

4 pork loin chops
2 Packham pears, quartered
2 cloves garlic, sliced
1 red onion, quartered
3 bay leaves
1 Tbsp whole coriander
2 Tbsp brown sugar
½ C (125 ml) white wine
2 Tbsp red wine vinegar
Salt and black pepper


Instructions

Preheat the oven to 180°C.

Place the pork chops, pears, garlic, onion and bay leaves into an oven proof dish. nLightly pound the coriander seeds and sprinkle over the pork. Mix the sugar, wine and vinegar in a bowl and pour over the pork. Season with salt and pepper. Bake uncovered for 30 – 40 minutes turning the pork halfway cooking time through to ensure that it is well-glazed.

Serve with potato or sweet potato wedges, and steamed baby cabbages.
