Pan Fried Grilled Cheese Sandwich with Bacon & Kimchi

Description
A gooey, pan-fried cheese sandwich filled with streaky bacon and punchy kimchi.
Ingredients
8 thick-cut slices of your favourite bread (we used a white farm loaf)
butter
200 g Ladismith Mozzarella, grated
100 g Ladismith Cheddar, grated
100 g kimchi, chopped
salt and black pepper
200 g of cooked streaky bacon
2 tsp (10 ml) chives, finely chopped
Instructions
Butter the slices of bread on one side. Mix the two types of cheese together, then set aside about 100g – this will be used on the outside of the sandwiches. Add a layer of mozzarella and cheddar to four slices, then add 2-3 spoons of chopped kimchi to each and season with a crack of salt and black pepper. Top with 3 slices of bacon per sandwich and then add the remaining cheese on top, divided equally across all 4 slices. Top with the remaining slices of bread and butter the tops.
Preheat a frying pan over medium heat and add a knob of butter to the pan. Once heated, place a little bit of the reserved cheese into the pan and then add the toastie on top. Cook for 3-5 minutes on one side. When you flip the toastie make sure to add a small portion of cheese to the bottom of the pan first and then flip the sandwich on top.
Set your oven to low and keep the cooked sandwiches warm until you are ready to serve. Garnish with chopped chives and tuck in.
