Orange and Almond Cakes with Orange Syrup

Orange is the new everything! You’ll never love orange more than when you try this recipe!


Ingredients

Cake
300 g castor sugar
300 g self-raising flour
180 ml Bulgarian yoghurt
180 ml sunflower oil
3 eggs
1 tsp (5 ml) almond essence
grated zest of 1 orange
50 g flaked almonds
Orange Syrup
1 C (250 ml) orange juice
125 g castor sugar


Instructions

Preheat the oven to 180 °C. Line 6 muffin cups with baking paper.

Cake

Combine all the ingredients for the cake mixture in a mixing bowl and blend well. Spoon the mixture into the prepared muffin pan. Sprinkle the flakes almonds over the cakes. Bake for 20 minutes, turning the tins halfway through the baking time. Remove the cakes from the muffin pan and allow them to cool.

Orange syrup

Place the ingredients in a small saucepan and bring to the boil. Allow to reduce , stirring occasionally , until a syrup has formed. Pour the syrup over the cooled cakes.
