
Morning Tomato & Ginger Health Juice

Description
Elevate your morning ginger shot into a kickstarter juice, full of the benefits of tomatoes, including the antioxidant lycopene, vitamin C, potassium, folate and vitamin K.
Ingredients
2 kg ZZ2 tomatoes
50 g fresh ginger, peeled and cut into chunks
1 tsp (5 ml) cayenne pepper
juice of 1 lemon
salt to taste
A digital thermometer
Instructions
Use a paring knife, remove the core top of the tomatoes and then slice an X into the base of each one. Half fill a large pot with water and bring it to a boil. Working in batches, blanch the tomatoes for 1-2 minutes until the skins start to peel back. Remove the tomatoes from the water and allow to cool slightly then peel off and discard the skins.
Cut the tomatoes into chunks and place into a blender. You may have to work in batches, depending on the size of your blender. Blitz until smooth. Strain the juice through a fine-mesh sieve and mash the pulp with a spatula to extract the last of the juice, then discard the pulp. Pour the juice into a medium size pot, set the pot over high heat and bring the juice to 90 ºC and then remove from the heat. This will pasteurise the juice and allow it to be kept for up to 7 days. Allow the juice to cool.
Add the ginger and water to a blender and blitz. Place the mixture into a fine mesh sieve over a bowl and press the pulp to extract all of the juice. Add the ginger water, lemon juice, and cayenne pepper to the cooled tomato juice. Taste and adjust seasoning accordingly. Pour the juice into a sterilised bottle and seal before storing in the fridge.
