New York Strip Steak with Blue Cheese Bacon Crumble & Panko Onion Rings
If you thought that America’s greatest pleasure was pizza, you’ve probably never tried a NY strip steak, it’s tender and beautifully marbled with fat. We’ve recreated this pastime favourite from Oceania’s classic steakhouse restaurant, Polo Grill, best known for their mouthwatering beef dishes. To replicate the tenderness and flavour of their steak , we’ve kept our preparation simple – translation, we’ve basted it with lots of butter!
You can’t call it American cuisine sans the crispy bacon, so we’ve topped this succulent steak with a bacon and blue cheese crumble.
For the ultimate onion rings, we’ve dredged in seasoned flour and egg before coating with panko bread crumbs, which add an unmatched crunchy texture. The sweetness of the onions also complements the pleasantly salty bacon and creamy blue cheese.
Oven-Baked Triple Decker Croque Monsieur with French Fries
When it comes to exceptional food, French cuisine arguably has the finest repertoire – from laid-back bistro-style dishes to top-notch haute cuisine, they have it all. Oceania’s The Bistro at the Grand Dining Room has a diverse cuisine offering, but their French cuisine is immaculate. Inspired by their menu, we’ve made a classic and coveted French dish — croque monsieur.
When Oceania Cruises claim that they have the ‘Finest Cuisine at SeaⓇ, they mean it; this is no ordinary sandwich, it’s a triple-decker Eiffel Tower of croque monsieurs!
After cooking a roux, we added some milk and Dijon mustard for the perfect, velvety Mornay sauce to create our sandwich. Layering each piece of toast with decadent sauce, wholegrain mustard for a mild kick, a generous sprinkling of Gruyère cheese and gypsy ham. We’ve then grilled it to golden perfection and garnished with fresh chives, a little fresh watercress rocket and, of course, a side of tasty French fries — c’est magnifique!
Gnocchi in a Creamy Basil Pesto Sauce
Mentally, we’re basking in the Tuscan sun, eating Mediterranean food, physically, we’re in the heart of winter in South Africa — so, we figured, the next best thing was to head to the kitchen, turn up the volume on ‘Volare’ and recreate this comforting bowl of Gnocchi di Patate al Pesto. Inspired by Oceania’s Italian restaurant, Toscana — this dish is influenced by rich Tuscan cuisine and generational recipes from Oceania’s Italian famiglia.
Making gnocchi from scratch is actually a lot simpler than you think, the only effort required is the kneading, the hand-rolling is all fun.
Once cooked, the gnocchi is toasted in a pan with some butter till golden brown. We’ve topped the pillowy gnocchi with a blended mixture of basil pesto and crème frâiche to create a creamy basil pesto sauce – it’s so simple but the nutty and zesty notes from the pine nuts and lemon zest in the pesto impart heaps of flavour.
Simply season with sea salt and pepper, add a drizzle of luscious extra virgin olive oil and finish with a couple of Parmigiano Reggiano shavings, belissimo!
Crispy Ginger Calamari with Homemade Sweet Chilli Sauce
It’s no secret that Capetonians can’t get enough of calamari. We’ve decided to put a South-East Asian spin on this favourite — taking inspiration from Oceania’s Red Ginger restaurant version, which offers an array of classic Asian dishes with a contemporary spin.
Instead of grilling it, we’ve given our calamari some texture and made it crispy with a ginger-infused flour coating. The ginger adds a delicious heat and flavour to the meaty yet tender calamari, which we’ve soaked in buttermilk before coating and frying.
To take this dish to the next level, we’ve fried off some garlic slices, which add a deliciously fragrant note to each bite.
For a hint of acidity and to balance all the flavours, we’ve pickled some thinly sliced shallots in red wine vinegar and garnished our calamari with some chopped coriander for a pop of freshness. And, of course, calamari isn’t complete without a delicious dipping sauce, so we’ve whipped together a homemade sweet chilli sauce — this dish has every element you want and more.
