Description

This cake is full of festive flavour. Bake it in the tin and gift the cake, the tin, and even the recipe to a favourite friend.


Ingredients

250 g flour
1 tsp (5 ml) baking powder
½ tsp (2.5 ml) salt
6 Granny Smith apples
100 g NoMU Sweet Rub
225 g butter, softened
200 g castor sugar
1 tsp (5 ml) NoMU Vanilla Paste
4 large eggs
50 g walnuts, roughly chopped


Instructions

Preheat oven to 180 °C.

Line two 20 cm loaf tins with baking paper.

Combine the flour, baking powder and salt in a bowl and stir well.

Peel and core the apples, cut into quarters and then cut each quarter into 1 cm slices. Sprinkle the apples with the NoMU Sweet Rub.

Beat the butter and sugar in the bowl of an electric cake mixer until thick and smooth. Add the NoMU Vanilla

Paste, and then add the eggs, one at the time, beating for 30 seconds after each addition.

With the mixer on a low speed, add the flour mixture and mix until combined.

Spoon a quarter of the apples into the prepared tins, pour the batter over the apples and smooth the batter to edges of tin. Layer the rest of the apples on top of the batter and sprinkle any remaining NoMU Sweet Rub over the top of the apples. Sprinkle with the walnuts and bake the cake for 40-45 minutes or until a toothpick inserted into the centre comes out clean.

Leave the cake in the tin to cool completely. Once cooled wrap and label and give the cake as is, tin and all. Makes a great gift for a friend or family member.
